This Masterclass aims to equip beginners in excelling in their first culinary competition. It will be split into 2 sessions: Hot Cooking and Pastry, hosted by Chef Matthew Yim (Global Competitions Director) and Chef Gary Lim (President, Singapore Pastry Alliance).


Attendees will get an overview of Competitions:

  • The various types of Competitions
  • Rules and Judging criteria
  • What one should do when embarking on their first competition
  • Common competition mistakes
  • What Judges are looking for
  • Examples of various Award's dishes (Gold, Silver, Bronze)

Special Invited Speaker: Chef Louis Tay will also be sharing his competition experience; from Team Assistant to Team Manager to Advisor, and his multiple competition accolades such as winning 2 World Cups and IKA.


Pastry Session

Invited Speakers Pastry Chefs Ben Goh and Wee Pai Hau will share their secrets to competition success. Attendees will be able to view winning examples and sample tasting portions, in which the Chefs would explain flavour combinations to take note of.
